South Hill Cider's Sunlight Transformed is a cider & wine coferment made by fermenting Dabinett apples on Cabernet Sauvignon skins (from Sheldrake Point Vineyard - a winery on the west shore of Cayuga Lake in the Finger Lakes region of Upstate New York, just north of South Hill's cidery). The Dabinett apples are grown on South Hill's estate orchard. The Fresh Dabinett juice is used to rehydrate the grape skins, which are co-fermented using the wild, ambient yeast from the fruit. 

This is the third vintage of this cider (2022 fruit harvest season). 

Tasting Notes: Full body and some apple forward sweetness up front supports a strong tannin rush that comes on mid palate. Note of apple skin, chewy tannins, soft red grape, and a bitter finish with hints of twig/apple stem. Notes of black currant & rose. Opens with red grape skin, black currant, and rose, and a fruity juiciness that quickly turns to drying tannins with a floral/herbaceous finish.
